sistema de evaluaci\u00f3n de la higiene, o sistema has, se ha aplicado en el reino unido en mataderos y salas de despiece con resultados satisfactorios y eficaces.  la aplicaci\u00f3n de un sistema ponderado de evaluaci\u00f3n de la higiene en las lonjas pesqueras tiene como objetivo la creaci\u00f3n de una herramienta de trabajo que facilite a la inspecci\u00f3n una sistem\u00e1tica de actuaci\u00f3n en la valoraci\u00f3n de la higiene, para mantenerla y mejorarla.  el dise\u00f1o del sistema ponderado de evaluaci\u00f3n de la higiene, o sistema speh, en las lonjas pesqueras, se basa en el estudio num\u00e9rico exhaustivo de la implicaci\u00f3n de los peligros sanitarios y de los factores, que de forma indirecta (instalaciones, locales y equipos, condiciones generales de higiene y del personal, manipulaciones y autocontroles), inciden sobre la calidad sanitaria de los productos de la pesca.  la obtenci\u00f3n de resultados num\u00e9ricos en forma de unidades de implicaci\u00f3n (ui) ha permitido el tratamiento matem\u00e1tico porcentual de cada serie de operaciones, manipulaciones, pr\u00e1cticas o aspectos concretos (sompacs) para cada secci\u00f3n de control sanitario (scs) a lo largo del flujo de manipulaci\u00f3n en la lonja pesquera.  de esta forma, para cada secci\u00f3n de control sanitario, los resultados porcentuales de participaci\u00f3n en la higiene obtenidos son:  (a) manipulaci\u00f3n de los productos pesqueros a bordo &#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;15,38% (b) operaciones en lonja &#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;-13,66% (c) mantenimiento e higiene de las instalaciones &#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;-20,72% (d) personal y pr\u00e1cticas de trabajo &#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8211;18,15% (e) gesti\u00f3n sanitaria del hielo y de otros sistemas de conservaci\u00f3n de los productos pesqueros &#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;-12,80% (f) gesti\u00f3n sanitaria de las cajas\/envases &#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;-13,37% (g) aspectos generales y gesti\u00f3n sanitaria&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8211;5,92%  el conocimiento de las valoraciones porcentuales de las secciones de control sanitario y de las series de operaciones, manipulaciones, pr\u00e1cticas o aspectos concretos ha permitido el dise\u00f1o del protocolo de auditor\u00eda sanitaria, del impreso o formulario de puntuaci\u00f3n del sistema speh y de la gu\u00eda de interpretaci\u00f3n en la aplicaci\u00f3n del sistema speh.  por \u00faltimo la ejecuci\u00f3n del protocolo de auditor\u00eda sanitaria y del formulario de puntuaci\u00f3n, junto con la informaci\u00f3n aportada por la gu\u00eda de interpretaci\u00f3n en la aplicaci\u00f3n del sistema speh, permite obtener un valor porcentual objetivo de la higiene en la
