Oeni involucrados en su adaptaci\u00f3n a las condiciones del vino y al desarrollo de la fml. A partir del estudio transcripcional hemos observado una relaci\u00f3n entre el nivel de expresi\u00f3n de ciertos genes y las condiciones particulares del cultivo. Tambi\u00e9n hemos estudiado por primera vez en vino tinto, la expresi\u00f3n de un gen que codifica para la enzima \u00edY-glucosidasa. Adicionalmente, hemos encontrado que diversas prote\u00ednas se ven afectadas luego del choque con 12% etanol. \u00e9stas est\u00e1n relacionadas con la bios\u00edntesis y estabilidad proteica y a la bios\u00edntesis de la pared celular. Estos resultados contribuyen a una mejor compresi\u00f3n de los mecanismos relacionados con la respuesta fisiol\u00f3gica de o. Oeni durante la adaptaci\u00f3n a las condiciones del vino y proveen informaci\u00f3n para la caracterizaci\u00f3n de cepas.<\/p>\n<p>&nbsp;<\/p>\n<h3>Datos acad\u00e9micos de la tesis doctoral
