La t\u00e9cnica de la micro-oxigenaci\u00f3n intenta reproducir de forma controlada ese fen\u00f3meno observado en barrica. este estudio determina a nivel industrial la dosis de oxigeno m\u00e1s adecuada, el efecto de la composici\u00f3n fen\u00f3lica inicial del vino y el momento de aplicaci\u00f3n de esta t\u00e9cnica para la mejora del color y la calidad sensorial del  vino tinto de monastrell.  en las distintas condiciones ensayadas en este trabajo, la micro-oxigenaci\u00f3n produce un incremento de la intensidad de color, atribuido a la influencia del ox\u00edgeno en la formaci\u00f3n de nuevos pigmentos derivados de los antocianos, m\u00e1s coloreados y m\u00e1s estables que \u00e9stos, sin producir oxidaciones en el vino ni un incremento de actividad microbiana indeseable. los resultados han demostrado que la dosis de ox\u00edgeno aplicada al vino influye en la extensi\u00f3n de las reacciones que modifican el perfil crom\u00e1tico de los vinos. De las dos dosis ensayadas, la m\u00e1s alta dio lugar a un mayor incremento de la intensidad de color del vino, ya que se observ\u00f3 una mayor formaci\u00f3n de nuevos pigmentos (piranoantocianos, condensaciones entre antocianos y taninos mediante acetaldeh\u00eddo y pigmentos polim\u00e9ricos) cuya presencia es la responsable de ese incremento de las caracter\u00edsticas crom\u00e1tica en el vino.
