Se desconoce si sus metabolitos y en particular sus glucur\u00f3nidos contribuyen a su actividad biol\u00f3gica. Adem\u00e1s, nunca se ha evaluado la expresi\u00f3n g\u00e9nica inducida en humanos por la ingesta de aov. Por lo tanto, la presente tesis doctoral se ha centrado en los siguientes aspectos: la evaluaci\u00f3n de la biodisponibilidad del hidroxitirosol y tirosol en humanos; el impacto de la glucuronoconjugaci\u00f3n sobre las actividades antioxidantes de los polifenoles del aov; y la identificaci\u00f3n de los mecanismos subyacentes a las acciones beneficiosas para la salud humana, analizando la respuesta transcript\u00f3mica in vivo resultante de la ingesta de aov. Para alcanzar los objetivos de la tesis, ha sido necesario, sintetizar patrones de los glucur\u00f3nidos y realizar diversos estudios metodol\u00f3gicos para estandarizar la evaluaci\u00f3n de la expresi\u00f3n g\u00e9nica. Se ha demostrado que la glucuronoconjugaci\u00f3n representa un 75% de los polifenoles recuperados en la orina y que esta comporta la p\u00e9rdida de la actividad antiradicalaria y de su capacidad antioxidante (test ex vivo de oxidaci\u00f3n de la ldl y dpph). Los estudios transcript\u00f3micos han identificado 10 genes relevantes por sus efectos antiateroscler\u00f3ticos inducidos por aov.<\/p>\n<p>&nbsp;<\/p>\n<h3>Datos acad\u00e9micos de la tesis
