El objetivo central de esta tesis se encuadra dentro de las tendencias en seguridad alimentaria por: i) abordar el control integral, es decir en todo el proceso de producci\u00f3n, ii) proveer de t\u00e9cnicas de bajo coste que permiten el an\u00e1lisis in-situ, y iii) permitir la ejecuci\u00f3n del an\u00e1lisis a personal no especializado y, por tanto, sensibilizando a la sociedad de la importancia de la seguridad alimentaria. En los alimentos de origen animal, el control integral abarca desde el seguimiento de los piensos utilizados para la cr\u00eda y engorde de los animales hasta los alimentos elaborados y puestos a disposici\u00f3n de los consumidores como, por ejemplo, la leche. Este control incluye, constituyendo una tendencia mucho m\u00e1s novedosa, el an\u00e1lisis de muestras de pelo de animal, por lo que tambi\u00e9n se han realizado determinaciones en este tipo de
