Aplicando los modelos matem\u00e1ticos seleccionados, la predicci\u00f3n de la vida \u00fatil de los ovoproductos elaborados mediante tratamiento t\u00e9rmico htst fue m\u00e1s precisa que la de los ovoproductos elaborados mediante tratamiento t\u00e9rmico tradicional. en los productos sometidos a tratamiento t\u00e9rmico htst no se cuantific\u00f3 crecimiento de microorganismos de la familia enterobacteriaceae. La identificaci\u00f3n de salmonella spp. Fue positiva en clara de huevo pasterizada mediante tratamiento t\u00e9rmico tradicional; en estos productos, se han aislado e identificado microorganismos pertenecientes a la familia enterobacteriaceae tales como escherichia coli, citrobacter freundii, enterobacter cloacae, serratia marcescens o shigella sp.  palabras clave: vida \u00fatil,
