Se compar\u00f3 la eficacia de 3 m\u00e9todos para determinar la madurez fen\u00f3lica (glories, itv, cromoenos) y la influencia de la heterogeneidad en la madurez fen\u00f3lica de la uva en el momento \u00f3ptimo de cosecha. Una vez obtenidos estos objetivos se estudi\u00f3 la posibilidad de aprovechamiento de uva verde procedente de los aclareos para disminuir simult\u00e1neamente el grado alcoh\u00f3lico y ph. Finalmente, se estudi\u00f3 la influencia del ph sobre la eficacia de la micro-oxigenaci\u00f3n. Los resultados presentan que la medici\u00f3n correcta de la madurez fen\u00f3lica es \u00fatil para adaptar las t\u00e9cnicas de vinificaci\u00f3n a las condiciones que permitan obtener vinos equilibrados.
