Vinifera pedro ximenez durante el desarrollo del fruto y el comportamiento del mismo durante la vinificacion. Se ha mostrado un especial interes por el comportamiento seguido por los compuestos polifenolicos de bajo peso molecular. Los resultados muestran que tanto las variables enologicas usuales como los compuestos polifenolicos, asi como el uso simultaneo de ambos, permiten una clasificacion del desarrollo del fruto en diferentes momentos fisiologicos independientes de la fecha cronologica. Las cuatro vendimias incluidas en esta memoria se separan con los datos utilizados especialmente con las variables usuales y con las muestras correspondientes al momento fisiologico que incluye la fecha de madurez del fruto. La vinificacion, que da lugar a unos vinos base para la crianza biologica equivalentes a los tradicionales de la zona montilla-moriles, da lugar a un drastico cambio en el perfil polifenolico de los
