Todas las muestras estudiadas cumplian con la normativa exigida por el consejo regulador de la denominacion de origen queso manchego. La especie aspergillus flavus, de gran importancia toxicologica, se aislo unicamente en el exterior de una de las muestras de queso artesanal.
