El objetivo del trabajo es la caracterizaci\u00f3n f\u00edsicoqu\u00edmica, microbiol\u00f3gica, composici\u00f3n de compuestos antioxidantes y la evaluaci\u00f3n de su actividad in vitro e in vivo, de cuatro variedades de tomate comercializadas en portugal: cereja, chucha, rama e redondo. Se estudiaron factores que pueden interferir en su potencial antioxidantes, como son: perf\u00edl fen\u00f3lico, condiciones de almacenamiento, tipo de agricultura (convencional y ecol\u00f3gica) as\u00ed como la influencia de su consumo en una poblaci\u00f3n humana control.   los tomates portugueses presentan un perfil fen\u00f3lico compuesto por \u00e1cido 5-o-cafeoilqu\u00edmico, \u00e1citdo cafeico, rutina, quercetina 3-o-ramnosa, naringina y kaempferol.  el almacenamiento es un facto que puede alterar las propiedades organol\u00e9pticas de los tomates y tanto la tempresatura como el tiempo de almacenamiento influyen en el contenido de compuestos fen\u00f3licos y en su acci\u00f3n antioxidante.  los tomates obtenidos por agricultura ecol\u00f3gica presentan un perfil nutricional m\u00e1s rico, con cantidades superiores de \u00e1cido asc\u00f3rbico  y de compuestos  fen\u00f3licos mayores que los producidos por la tradicional, presentando adem\u00e1s un mejor grado de aceptaci\u00f3n en los an\u00e1lisis sensoriales.  el consumo de tomates reduce significamente  los niveles de triglic\u00e9ridos, colesterol total y \u00e1cido \u00farico, modificando tambi\u00e9n los par\u00e1metros antropom\u00e9tricos, pudiendo estar relacionado con la capacidad antioxidante de los compuestos bioactivos presentes en los tomates.  finalmente, los resultados obtenidos indican que todas las variedades de tomates portugueses presentan una buena capacidad antioxidante, pudiendo ser considerados una fuente diet\u00e9tica rica en sustancias antioxidantes beneficiosas para la
