El sistema de control de fermentaciones permite el control de cuatro reactores de fermentacion en tiempo real, mientras que el sistema de control de destilaciones permite la automatizacion de un sistema de destilacion por arrastre de vapor. El sistema esta basado en arquitectura pc y el conocimiento esta plasmado en bases de reglas utilizando ops 83. El sistema de fermentacion ha sido validado en la bodega pazo de barrantes mediante la fermentacion de mosto de uva albari\u00f1a, y el sistema de destilacion ha sido validado en la destileria aguardientes de galicia mediante la obtencion de aguardientes del ulla. Los resultados obtenidos, comparados con los mismos procesos controlados por operador humano, determinan que estos sistemas pueden acelerar el proceso, mejorar la calidad del producto obtenido y
