Se planteo realizar el tratamiento tanto en el procesado convencional (con minimos cambios en las instalaciones existentes) como en el alternativo, que pretende eliminar el empleo de disolventes toxicos en las industrias alimentarias.  tras el tratamiento, se lograron mejoras superiores al 20% en los procesos de extraccion por presion en un sistema discontinuo; en el procesado acuoso, las mejoras rebasaron el 30%, eliminandose simultaneamente mas del 80% de los polifenoles, lo que redunda en una superior calidad nutricional de la harina, que asi podria ser util para alimentacion humana en forma de concentrados o aislados.  en este trabajo se estudiaron asimismo aspectos fundamentales del comportamiento de enzimas celuloliticos en medios de baja humedad y en presencia de inhibidores, asi como aspectos microestructurales de las semillas de girasol tras los diferentes tratamientos a que fueron sometidas.<\/p>\n<p>&nbsp;<\/p>\n<h3>Datos acad\u00e9micos de la tesis doctoral
