Este trabajo se ha desarrollado esencialmente a nivel molecular (aislamiento y caracterizaci\u00f3n de genes), en apoyo a los estudios f\u00edsico-qu\u00edmicos y gen\u00e9ticos que permitieron elegir los modelos de este estudio y determinar los criterios f\u00edsicos-qu\u00edmicos m\u00e1s discriminantes de los diferentes estados de maduraci\u00f3n.
