Hoy en d\u00eda, existe una clara tendencia en la sociedad hacia la mejora de la alimentaci\u00f3n, no s\u00f3lo desde el punto nutritivo, sino para transformar \u00e9sta en una herramienta v\u00e1lida y eficaz para la prevenci\u00f3n de enfermedades. Los alimentos funcionales, definidos como aquellos que son capaces de aportar alg\u00fan beneficio fisiol\u00f3gico adicional comparados con sus an\u00e1logos convencionales, est\u00e1n ganando una importancia cada vez mayor en este sentido. As\u00ed, una de las grandes tendencias en investigaci\u00f3n relacionada con la ciencia y tecnolog\u00eda de alimentos, es la b\u00fasqueda de nuevos ingredientes funcionales que puedan servir para
