Para ello se han empleado cromatograf\u00eda l\u00edquida de alta resoluci\u00f3n con detecci\u00f3n fluorescente y de espectrometr\u00eda de masas, as\u00ed como diversas estrategias de aislamiento selectivo.  en concreto se ha puesto a punto un m\u00e9todo anal\u00edtico directo para la determinaci\u00f3n de aminas bi\u00f3genas en mostos y vinos. se ha desarrollado un procedimiento espec\u00edfico para la preconcentraci\u00f3n y aislamiento por extracci\u00f3n en fase s\u00f3lida (spe) de aminas bi\u00f3genas en vinos, a fin de mejorar las prestaciones anal\u00edticas del m\u00e9todo directo. se ha estudiado los efectos de las bacterias l\u00e1cticas y el tiempo de crianza en barrica en la generaci\u00f3n de aminas bi\u00f3genas durante la elaboraci\u00f3n de vino de alta gama a escala industrial, determinando los momentos y condiciones en que \u00e9stas se forman. por \u00faltimo se han estudiado diversas estrategias anal\u00edticas para la determinaci\u00f3n sensible y selectiva de precursores ciste\u00ednicos en mostos de uva. Se han considerado estrategias de aislamiento y preconcentraci\u00f3n selectiva seguidas por derivatizaci\u00f3n y hplc-fluorescencia, as\u00ed como estrategias hplc-ms-ms
