Los cambios que experimentan las manzanas y las peras en postcosecha afectan a las propiedades sensoriales de apariencia, olor, sabor y textura, siendo necesario evaluarlos para ofrecer al consumidor una fruta seg\u00fan sus especificaciones de calidad. En esta tesis se estudia la calidad sensorial de las reinetas d.O.P. Bierzo y marca de garant\u00eda valle de las caderechas (burgos) y la pera conferencia marca de garant\u00eda bierzo todas ellas producidas en castilla y le\u00f3n, con el fin de establecer una normalizaci\u00f3n en los m\u00e9todos anal\u00edticos sensoriales que ayuden a definir la calidad de estas marcas, as\u00ed como su relaci\u00f3n con las propiedades f\u00edsico-qu\u00edmicas utilizadas habitualmente en el control de calidad de estas frutas como el color, \u00c2\u00babrix y los par\u00e1metros de dureza instrumental.<\/p>\n<p>&nbsp;<\/p>\n<h3>Datos acad\u00e9micos de la
