Es una tecnolog\u00eda emergente que ofrece la ventaja de concentrar el  alimento l\u00edquido sin alterar sus propiedades organol\u00e9pticas a causa de las bajas temperaturas de  proceso.  La presente memoria de tesis analiza y compara los resultados obtenidos en diferentes  procesos de crioconcentraci\u00f3n de l\u00edquidos alimentarios ensayados hasta la fecha, describiendo  las variables de proceso m\u00e1s importantes y haciendo \u00e9nfasis en los aspectos a considerar para el  desarrollo futuro de esta operaci\u00f3n unitaria.   se avanza en el conocimiento del proceso de crioconcentraci\u00f3n en capa en pel\u00edcula descendente  sobre una superficie refrigerada, a trav\u00e9s de ensayos en un equipo a escala piloto. Con este  equipo se ha concentrado zumo de naranja y lactosuero suministrado por las industrias, ambos  en cuatro etapas de concentraci\u00f3n. Se estudia la influencia de la concentraci\u00f3n y de las bajas  temperaturas sobre la viscosidad de fluidos alimentarios, as\u00ed como tambi\u00e9n la disminuci\u00f3n del  punto de congelaci\u00f3n con el incremento de la concentraci\u00f3n, como una manera de obtener datos  para avanzar en la comprensi\u00f3n del proceso de crioconcentraci\u00f3n en capa de fluidos
