<\/strong><\/h2>\n<p>A lo largo del ultimo siglo se ha producido un aumento en la esperanza de vida de la poblaci\u00f3n espa\u00f1ola que ser\u00e1 aun mayor seg\u00fan las proyecciones de poblaci\u00f3n para el a\u00f1o 2.060, que nos indican que el 30% de la poblaci\u00f3n s\u00e9r\u00e1 mayor de 65 a\u00f1os, siendo el segmento de mayor crecimiento el de las personas centenarias, por lo que espa\u00f1a ser\u00e1 uno de los pa\u00edses mas envejecidos del mundo por detras de jap\u00f3n, alemania e italia. debido a la importancia de la alimentaci\u00f3n para el mantenimiento de la salud y de la calidad de vida, se plantea el estudio de una poblaci\u00f3n de 62 ancianos institucionalizados en una residencia de m\u00e1laga capital perteneciente al \u00e1mbito privado, a los que se les realiza valoraci\u00f3n nutricional, valoraci\u00f3n de la ingesta y de macro y micronutrientes. posteriormente se realiza una intervenci\u00f3n nutricional con aceite de oliva virgen extra (aove) a una poblaci\u00f3n de 26 ancianos del mismo medio residencial a fin de evaluar su efecto sobre los parametros analiticos as\u00ed como evaluar su efecto sobre la actividad de las enzimas antioxidantes en los eritrocitos. los resultados ponen de manifiesto una disminuci\u00f3n significativa en los lipidos sericos, trigliceridos, colesterol total ,  y ldl-colesterol as\u00ed como un incremento en los valores de hdl-colesterol. con respecto al efecto del aove sobre la actividad de las  enzimas antioxidantes en eritrocitos, se observa un incremento en la actividad de catalasa y una
