La bacteriocina se sintetiz a como un p\u00e9ptido precursor de 63 amino\u00e1cidos con una secuencia l\u00edder de 3 amino\u00e1cidos que, tras ser eliminada, permite la uni\u00f3n covalente de los amino\u00e1cidos de la regi\u00f3n n-terminal y c-terminal originando una bacteriocina madura de 60 amino\u00e1cidos y estructura circular. La garvml es la primera bacteriocina circular descrita producida por l. Garvieae. Durante el desarrollo de este trabajo tambi\u00e9n se ha procedido a la caracterizaci\u00f3n bioqu\u00edmica y gen\u00e9tica de las bacteriocinas producidas por entero coccus faecalis dbh18. Dicha cepa codifica los genes que sintetizan las bacteriocinas enterocina v583 y enterocina l50 (entl50a y entl50b) y dos genes m\u00e1s, similares a entl50a-entl50b y denominados entjsa y entjsb, que sintetizan la bacteriocina ente rocina js (entjsa y entjsb). De los resultados obtenidos se concluye que e. Faecalis dbh18 codifica m\u00faltiples bacteriocinas, posiblemente no limitadas a especies determinadas de enterococos ni al origen alimentario, cl\u00ednico o ambiental de los enteroc ocos que las codifican. La realizaci\u00f3n de esta tesis tambi\u00e9n ha permitido el desarrollo y utilizaci\u00f3n de herramientas gen\u00e9ticas que han permitido la producci\u00f3n heter\u00f3loga y expresi\u00f3n funcional de la hiracina jm79 (hirjm79), producida por e. Hirae dch 5, de la enterocina p (entp) producida por e. Faecium p13, y de la enterocina a (enta), producida por e. Faecium t136, por otras bacterias l\u00e1cticas (bal) y por las levaduras pichia pastoris, kluyveromyces lactis, hansenula polymorpha y arxula adenini nivorans. De gran inter\u00e9s ha sido la utilizaci\u00f3n de vectores de expresi\u00f3n y la construcci\u00f3n de quimeras g\u00e9nicas que han permitido la clonaci\u00f3n, producci\u00f3n y expresi\u00f3n funcional de la enta por las levaduras p. Pastoris x-33ea y k.
