Como instrumentos de medida se utilizan una encuesta sobre opinion de los pacientes hospitalizados y una metodolog\u00eda de trabajo especifica para medir la ingesta cualitativa y cuantitativa de los pacientes. Finalmente se comparan los resultados actuales con los de un estudio previo en el que se utilizo identica metodolog\u00eda. Tras la modificacion del sistema de alimentacion del hospital universitario san carlos de Madrid, la opinion de los pacientes para la gran mayoria de cuestiones planteadas resulta buena o muy buena observandose una importante mejoria en aquellos puntos evaluados como mas deficientes en el estudio inicial. Los volumenes de alimento desechado resultan elevados y deben corregirse.
