{"id":11128,"date":"2001-05-06T00:00:00","date_gmt":"2001-05-06T00:00:00","guid":{"rendered":"https:\/\/www.deberes.net\/tesis\/sin-categoria\/comportamiento-postcosecha-de-la-cereza-en-atmosferas-protectoras\/"},"modified":"2001-05-06T00:00:00","modified_gmt":"2001-05-06T00:00:00","slug":"comportamiento-postcosecha-de-la-cereza-en-atmosferas-protectoras","status":"publish","type":"post","link":"https:\/\/www.deberes.net\/tesis\/ciencias-tecnologicas\/comportamiento-postcosecha-de-la-cereza-en-atmosferas-protectoras\/","title":{"rendered":"Comportamiento postcosecha de la cereza en atm\u00f3sferas protectoras"},"content":{"rendered":"<h2>Tesis doctoral de <strong> Sara Isabel Remon Oliver <\/strong><\/h2>\n<p>La cereza es un fruto extremadamente perecedero, no climat\u00e9rico, cuya fisiolog\u00eda y evoluci\u00f3n postcosecha han sido muy poco estudiados.  el objetivo general de este trabajo ha sido caracterizar el proceso madurativo de la cereza burlat as\u00ed como determinar el efecto de las atm\u00f3sferas protectoras en esta y en otras variedades de cereza con el fin de establecer unos par\u00e1metros \u00f3ptimos de tratamientos postrecolecci\u00f3n que permitan prolongar su vida \u00fatil, manteniendo una alta calidad.  se ha caracterizado el proceso madurativo de la cereza burlat observ\u00e1ndose marcadas diferencias con respecto al de variedades m\u00e1s tard\u00edas. La variedad burlat presenta una mayor producci\u00f3n de etileno, superior tasa respiratoria, menos resistencia mec\u00e1nica, as\u00ed como una menor acidez que las cerezas sunburst y sweetheart. A pesar de que la cereza es un fruto no climat\u00e9rico se observa un incremento en la producci\u00f3n de etileno durante la maduraci\u00f3n. Por \u00faltimo, el estudio realizado durante la maduraci\u00f3n indica la posibilidad de utilizar el color como un \u00edndice de madurez.  el incremento de di\u00f3xido de carbono en las atm\u00f3sferas de almacenamiento ejerce un claro efecto protector sobre algunas de las caracter\u00edsticas de la cereza: mantiene valores m\u00e1s altos de acidez, provoca un incremento de la resistencia mec\u00e1nica, as\u00ed como una menor actividad ppo y pox. No ejerce ning\u00fan efecto sobre las actividades pme, pg, ni sobre el contenido en s\u00f3lidos solubles, y provoca una menor s\u00edntesis de antocianos. Globalmente podemos concluir que la utilizaci\u00f3n de atm\u00f3sferas enriquecidas en di\u00f3xido de carbono resulta altamente beneficiosa para la conservaci\u00f3n de la cereza.  a pesar de que tradicionalmente la cereza se clasifica como un fruto muy tolerante a las altas concentraciones de di\u00f3xido de carbono (&gt;20%), los resultados obtendios para la variedad burlat indican una tolerancia mucho menor.
