Una se dedic\u00f3 a la caracterizacion fisica del racimo , otra se destino a la obtencion de mostro por prensado directo y una tercera se someti\u00f3 a un proceso de estrujado y maceracion pelicular y posterior prensado. Las distintas clases de mostos obtenidos se fermetaron por triplicado en identicas condiciones hasta agotamiento de los azucares, manteniendose seguidamente los vinos sobre sus lia durante 20 dias a 10\u00c2\u00ba c. En los mostos y vinos se analizaron los parametros de control enologico y diversas familias de compuestos del aroma mediante extraccion con freon 11 y cromatografia de gases en columna capilar. El analisis de varianza simple de los datos de composcion fisica del racismo muestra a un nivel p&lt;0,05, que los racimos de la variedad airen poseen un mayor peso medio del grano de uva y un mayor porcentaje de semillas. los datos de composicion de mostos y vinos se sometieron a un analisis de varianza multiple tomando como fuentes de variacion la variedad de uva y la maceracion, obteniendose a un nivel p&lt;0,05, que los contenidos en acidos malico, citrico, y hexanoico y los contenidos en los monoterpenos beta-ionona y e-nerolidol permiten diferenciar entre los mostos de cada variedad, mientras que los contenidos en acetato de etiloo y acetoina dependen unicamente de la maceracion, los restantes compuestos dependen significativamente de las dos fuentes de variacion consieradas. Los vinos presentan contenidos en acetato de etilo, octanoato, propanoato de etilo y lactato de butilo, que dependen significativamente de la variedad de uva, en cambio etanol, polifenoles, los acetatos de isobutilo, isoamilo y 2-feniletanol y hexanoato de etilo dependen exclusivamente de la maceracion pelicular. El periodo de contacto con las lias provoca un descenso significativo (p&lt;0,05) de los contenidos en acidez titul<\/p>\n<p>&nbsp;<\/p>\n<h3>Datos acad\u00e9micos de la tesis doctoral
