El consumo de resveratrol a trav\u00e9s de la dieta es insignificante, por lo que las altas dosis empleadas (enfoque farmacol\u00f3gico) junto con los modelos de patolog\u00edas severas usadas en la bibliograf\u00eda, tienen escasa extrapolaci\u00f3n dentro del contexto de la prevenci\u00f3n en alimentaci\u00f3n y salud. Adem\u00e1s, la inmensa mayor\u00eda de mecanismos de acci\u00f3n descritos para el resveratrol ha sido en modelos celulares a concentraciones no fisiol\u00f3gicas o en modelos animales con equivalentes a gramos de ingesta en el ser humano. El objetivo principal de la presente tesis doctoral ha sido cubrir dos aspectos importantes relacionadas con el resveratrol. Por un lado, evaluar en el modelo cerdo, fisiol\u00f3gicamente cercano al ser humano, el potencial preventivo de dosis diet\u00e9ticamente relevantes de resveratrol en estad\u00edos tempranos de aterosclerosis y por el otro, explorar el metabolismo y distribuci\u00f3n en tejidos del resveratrol en este modelo.  la presente tesis demuestra por primera vez el potencial cardioprotector de polifenoles de la uva y del resveratrol mediante la ingesta de un complemento dentro de la dieta, a largo plazo, con un modelo fisiol\u00f3gicamente cercano al humano y en un contexto de riesgo cardiovascular moderado mucho m\u00e1s acorde con el concepto de prevenci\u00f3n. A\u00fan queda por esclarecer qui\u00e9n es el o los responsables \u00faltimos y los mecanismos de acci\u00f3n que llevan a ejercer este efecto, pues los beneficios se observan sin poder atribuir un
