Estes envases tienen una participaci\u00f3n activa en la conservaci\u00f3n y propiedades de los alimentos, sirviendo de barrera a la migraci\u00f3n de la humedad, gases, aromas, etc., Adem\u00e1s de servir de veh\u00edculo de compuestos nutritivos, antioxidantes o conservantes. Em la actualidad las aplicaciones pr\u00e1cticas de los envases comestibles se han realizado principalmente en vegetales, mientras que son escasas en los alimentos de origen animal. Las proteinas, tanto de orixen vegetal como animal, presentan un gran inter\u00e9s como materiales formadores de envases activos comestibles. Prote\u00ednas interesantes en este campo son por ejemplo las del lactosuero de queser\u00eda, las prote\u00ednas de huevo o las prote\u00ednas de soja. Esta tesis tiene como obxetivos estudiar las propiedades barrera y mec\u00e1nicas de los envases comestibles constitu\u00eddos por diversas prote\u00ednas y aplicarlos en forma de recubrimiento en los productos de la pesca y acuicultura congelados, estudiando sus efectos en diversos par\u00e1metros f\u00edsico-qu\u00edmicos y de composici\u00f3n de estos alimentos con el objetivo de obtener una
