El ayuno previo al sacrificio es uno de los factores del cultivo que puede afectar a la calidad de este producto, pues un ayuno de m\u00e1s de 24 horas acelera los procesos de deterioro post mortem y limita su vida \u00fatil. La sustituci\u00f3n parcial del aceite de pescado  de la dieta con aceites vegetales provoca cambios en la calidad nutricional (mayor contenido de los \u00e1cidos grasos n-6 y menor cantidad de epa y dha) y sensorial (mayor intensidad de color y mayor firmeza), pero no afecta a su vida \u00fatil. \u00e9sta, por otro lado, podr\u00eda ser prolongada mediante dietas suplementadas con aceites esenciales de tomillo (thymbra capitata, quimiotipo carvacrol, y  thymus zygis subsp. The starvation prior to slaughter is one of factors that can affect to the quality of this product. A starvation of more than 24 hours accelerates the post mortem deterioration process and reduces his shelf-life. The partial replacement of fish oil with vegetable oils in diets induces changes in the nutritional (higher content of n-6 fatty acids and lower quantity of epa and dha fatty acids) and sensory quality (greater colour intensity and higher firmness), but does not affect to the shelf-life.
