En este trabajo, se han desarrollado nuevas metodolog\u00edas de elucidaci\u00f3n estructural para estos compuestos basadas en lc-ms\/ms como fruto del estudio sistem\u00e1tico de las fragmentaciones cid observadas para las principales familias.Por otra parte, se han evaluado y comparado una serie de clasificadores basados en algoritmos lineales y cuadr\u00e1ticos, arboles de decisi\u00f3n y learning machines (redes neuronales y svmda)  para casos concretos de discriminaci\u00f3n entre zumos de diferentes clases. As\u00ed mismo, ha sido estudiada la viabilidad de metodolog\u00edas basadas en simca para el reconocimiento y detecci\u00f3n de adulteraciones en zumos y modelos de regresi\u00f3n multivariante  para cuantificar la magnitud de tales adulteraciones.Por \u00faltimo, se ha evaluado de forma preliminar la aplicaci\u00f3n de tratamientos multivariantes y n-way basados directamente en cromatogramas
