El objetivo principal de esta tesis fue ahondar en el conocimiento de los posibles mecanismos anti-inflamatorios y anti-infecciosos de extractos ricos en polifenoles (flavanonas o elagitaninos), as\u00ed como de algunos de sus componentes individuales (flavanonas) y metabolitos derivados  (\u00e1cido el\u00e1gico y urolitinas). Estos estudios se han realizado en: i) modelos celulares representativos del endotelio y de la mucosa intestinal donde ocurren algunos de los procesos clave que desencadenan la inflamaci\u00f3n, ii) un modelo animal de inflamaci\u00f3n intestinal. Nuestros resultados evidencian los efectos moduladores moderados de dosis bajas de los extractos y metabolitos sobre procesos (migraci\u00f3n celular y adhesi\u00f3n de monocitos) y mol\u00e9culas (il-8, pge2, pai-1) clave en la respuesta inflamatoria. La informaci\u00f3n presentada en esta tesis apoya el consumo de productos derivados de granada y c\u00edtricos para prevenir patolog\u00edas cr\u00f3nicas asociadas a inflamaci\u00f3n.  palabras clave: aterosclerosis; migraci\u00f3n celular; adhesi\u00f3n de monocitos; reparaci\u00f3n de tejidos; inflamaci\u00f3n intestinal; quorum sensing; compuestos fen\u00f3licos; metabolitos bacterianos  diet plays a key role in the prevention of chronic inflammatory diseases. In this thesis we sought to investigate the putative anti-inflammatory and bacterial infection-inhibitory properties and mechanisms of natural extracts rich in flavanones and ellagitannins, as well as of some individual components (flavanones) and derived microbial metabolites (urolithins and ellagic acid). These studies have been carried out in: i) cell models representative of the vascular endothelium and intestinal mucosa where some of the key initiating steps of inflammation take place and ii) an animal model of intestinal inflammation which reproduces some specific symptoms of the disease. Our data evidence the moderate modulatory effects of low doses of the extracts and metabolites tested on key processes (cell migration and monocytes adhesion) and molecules (il-8, pge2 and pai-1) associated to the inflammatory response in the endothelium and intestinal mucosa. These results support the consumption of pomegranate and orange extracts as a preventive means against inflammation and derived pathologies.     key words: atherosclerosis; cell migration; monocytes
