Los resultados obtenidos muestran que la composici\u00f3n de los quesos estudiados no difiere significativamente entre los distintos productores, pero la estaci\u00f3n del a\u00f1o influye significativamente en los valores fisicoqu\u00edmicos. El desarrollo de un procedimiento de microscop\u00eda electr\u00f3nica de barrido y an\u00e1lisis de imagen ha conducido a la cuantificaci\u00f3n de distintos par\u00e1metros microestructurales (n\u00famero de poros, per\u00edmetro y \u00e1rea de los mismos, grosor de la hebra y porosidad) a lo largo de la elaboraci\u00f3n del queso, permitiendo la descripci\u00f3n de la microestructura durante los procesos de coagulaci\u00f3n y sin\u00e9resis. Con la aplicaci\u00f3n de un sensor en l\u00ednea durante estas dos etapas se define el perfil espectral de la elaboraci\u00f3n del queso bajo condiciones industriales, desarrollando algoritmos de predicci\u00f3n de la textura, humedad y rendimiento quesero.  palabras clave: sensor en l\u00ednea, cuantificaci\u00f3n microestructura, an\u00e1lisis fisicoqu\u00edmico, cuajada, quesos de cabra,   in order to implement an online sensor it is necessary to know in depth the changes produced in the raw materials throughout cheese making. Hence, the aim of this study is to analyze curd&apos;s microstructure and optical sensors implementation during cheese making.  The results obtained show that the physicochemical composition does not differ significantly between cheese manufacturers, but affect cheese physicochemical composition. The development and application of a scanning electron microscopy and image analysis method has allowed the quantification of different microstructural parameters (number of pores, perimeter and area thereof, the strand thickness and porosity) along cheese manufacture that has been especially important when introducing an on line sensor as the quantified microstructural variations along cheese making had a certain evolve of the spectrum obtained by the online sensor applied. The implementation of the online sensor has allowed the development of different texture, moisture and cheese yield prediction algorithms.  keywords: online sensor, microstructure quantification,
