Mar <\/strong><\/h2>\n<p>Hemos pretendido conocer los efectos del consumo de dietas sometidas a reacciones de maillard, sobre algunos aspectos del metabolismo proteico y de la inmunocompetencia en ratas en crecimiento. El estudio del metabolismo proteico se ha abordado en higado, timo y bazo, mientras que la evaluacion del sistema inmunitario comprendio, ademas del estudio de los organos linfoides descrito, la respuesta inmune humoral en bazo y las celulas inmunocompetentes en sangre. A este fin, se utilizaron tres dietas que fueron preparadas segun las recomendaciones del national research council (1978) con diferentes fuentes proteicas: caseina cruda (grupo control); mezcla caseina+glucosa calentada a 140 grados c durante dos horas (grupo maillard 1); mezcla caseina+glucosa+fructosa calentada a 140 grados c durante una hora (grupo maillard 2). Se utilizaron 72 ratas wistar machos al destete, divididas en tres grupos en funcion de la dieta ingerida. El periodo experimental fue de 20 dias. El dia 16 del experimento, la mitad de los animales de cada grupo fue inmunizado con una carga de srbc (1,2 x 10 9 celulas\/100 g de rata), originandose entonces dos lotes dentro de cada grupo: testigo y estimulado.
