Se ha desarrollado un proceso respetuoso con el medioambiente ya que no se utilizan disolventes org\u00e1nicos y como catalizadores se han probado satisfactoriamente la lipasa b de candida antarctica, as\u00ed como su derivado inmovilizado comercial, novozym\u00c2\u00ae435. Los experimentos se han llevado a cabo en reactores de tipo discontinuo, y se han desarrollado una serie de m\u00e9todos de an\u00e1lisis para el seguimiento de los reactivos y productos, as\u00ed como para evaluar las propiedades f\u00edsico-qu\u00edmicas del catalizador y de los productos generados. Se han estudiado las variables que afectan al proceso, como la temperatura, la concentraci\u00f3n de los reactivos, la estabilidad del biocatalizador y los fen\u00f3menos de transporte, para finalmente proponer modelos cin\u00e9ticos que, teniendo en cuenta criterios f\u00edsicos y estad\u00edsticos, representen lo m\u00e1s correctamente posible los resultados recogidos experimentalmente. De especial inter\u00e9s, ha resultado el efecto positivo de la adici\u00f3n de agua al medio de reacci\u00f3n, tanto desde el punto de vista cin\u00e9tico como de estabilizaci\u00f3n de la lipasa, por un lado, y las interesantes propiedades del mono\u00e9ster de p-metoxicin\u00e1mico como filtro ultravioleta para cremas solares.\u00c2\u00bfenzymatic production of monoglycerides by esterification of glycerol with benzoic and p-metoxicinnamic acid\u00c2\u00bfthis thesis work deals with the revalorization of glycerol, a sub-product of a great availability in the last decade, through its esterification with benzoic and p-metoxicinnamic acids, producing monoesters with interesting application possibilities for the pharmaceutical and cosmetic industries. This \u00c2\u00bfgreen process\u00c2\u00bf was developed in the absence of organic solvents and using a biocatalyst: lipase b of candida antarctica or its industrial immobilized derivative, novozym\u00c2\u00ae435. The esterification trials were done batch-wise, and a series of analytical methods were developed for the identification and quantification of the reacting species, and for the evaluation of the physical and chemical properties of the biocatalyst and of the generated products. The major process variables were studied, such as temperature, reactants concentration, catalyst stability and material transport phenomena. Finally, kinetic models were proposed that fit the experimental data appropriately, according to physical and statistical criteria. Of special interest is the positive effect of the addition of water to the reaction medium, both from the kinetics and the enzyme stabilization points of view.
