Se optimiz\u00f3 el m\u00e9todo de extracci\u00f3n a trav\u00e9s de combinaciones de disolventes org\u00e1nicos con agua. Todos extractos obtenidos se estudiaron por m\u00e9todos in vitro: contenido de polifelones totales o determinaci\u00f3n de la actividad antioxidante frente a radicales libres como el radical cati\u00f3nico abts, el radical apph y el comportamiento frente al cati\u00f3n fe (ii) (frap). Estos m\u00e9todos, que dan una idea inicial del comportamiento del extracto y de los compuestos que hay en \u00e9l, no siempre se correlacionan con la capacidad de inhibir el deterioro oxidativo de los l\u00edpidos en los alimentos, debido a que los ensayos in vitro no tienen en cuenta factores como la ubicaci\u00f3n f\u00edsica del antioxidante, su interacci\u00f3n con la matriz del alimento o las condiciones ambientales.  por ese motivo, se han desarrollado modelos que permiten reproducir las condiciones esperadas en los productos alimenticios y evaluar con precisi\u00f3n el potencial antioxidante protector de la degradaci\u00f3n de los l\u00edpidos en los alimentos. En esta l\u00ednea se han analizado dos sistemas: uno llamado \u00c2\u00bfsistema modelo\u00c2\u00bf emulsi\u00f3n de aceite (exento de sus antioxidantes naturales) en agua y un sistema c\u00e1rnico. adem\u00e1s, se analiz\u00f3 la composici\u00f3n qu\u00edmica de cada uno de los extractos usando t\u00e9cnicas tales como cromatograf\u00eda l\u00edquida de alta resoluci\u00f3n (hplc) o espectrometr\u00eda de cromatograf\u00eda-masa l\u00edquida (lc-ms). En el extracto de caesalpinia spinosa se evalu\u00f3 su efecto antimicrobiano frente algunos microorganismos comunes y el mayor desarrollo de una cepa probi\u00f3tica lactobacillus plantarum.
