Aspectos relevantes de este estudio son la b\u00fasqueda de evidencias cient\u00edficas que permitan la diferenciaci\u00f3n de leche y queso de ovejas en pastoreo mediante la evaluaci\u00f3n de su calidad nutricional, tecnol\u00f3gica y sensorial, as\u00ed como la identificaci\u00f3n de potenciales marcadores qu\u00edmicos para la autentificaci\u00f3n de alimentos procedentes de animales en pastoreo. Se llevaron a cabo dos dise\u00f1os experimentales diferentes, uno de ellos realizado con  un reba\u00f1o controlado de ovejas de raza latxa en pastoreo a tiempo parcial, y el segundo con reba\u00f1os comerciales adscritos a la denominaci\u00f3n de origen idiazabal, los cuales, al final del per\u00edodo de lactaci\u00f3n, son manejados en pastoreo extensivo de monta\u00f1a. Los resultados obtenidos contribuyen con datos relevantes a la diferenciaci\u00f3n de leches y quesos de oveja procedentes de diferentes sistemas de manejo en pastoreo. Algunos de los compuestos analizados (\u00e1cidos grasos, tocoferoles) pueden ser potenciales marcadores qu\u00edmicos para la autentificaci\u00f3n de leche y queso procedentes de animales en pastoreo, en particular, de zonas de monta\u00f1a. Las evidencias cient\u00edficas aportadas sobre la mayor calidad nutricional de la leche y queso procedente de animales en pastoreo reforzar\u00e1 la actividad de los productores. La presencia de potenciales marcadores qu\u00edmicos en los alimentos de pastoreo puede proporcionar a entidades de control, administraci\u00f3n p\u00fablica y asociaciones profesionales, herramientas
