(381 d\u00edas de edad), un peso canal de 329 kg. Y un rendimiento canal caliente del 60,7%. Las canales presentaron una buena conformaci\u00f3n, 11,2 (u) y un grado den engrasamiento moderado de 6,7(3-). en la disecc\u00edon de la sexta costilla se determinaron unos porcentajes de magro del 68,2%, un 12,7% de grasa total y un 16,3% de hueso. La composici\u00f3n qu\u00edmica del lt mostr\u00f3 unos contenidos de humedad y prote\u00edna del 74,6% y 21,7% respectivamente, mientras que el porcentaje de grasa intramuscular fue del 2,43% convalores entre 0,95 hsta 5,70%. Los contenidos de pigmentos hemo, col\u00e1gneo total y col\u00e1gneo soluble fueron 148 ug g-1, 3,14 mg.G m\u00fasculo -1 y 40%, respectivamente. En las caracter\u00edsticas bioqu\u00edmicas del lt se determinaron munas actividades lactato deshidrogenosa de 1.171 umol.Min -1g m\u00fasculo-1 (cv=12,5%) e isocitrato deshidrgenasa de 1.642 nmol.Min-1g m\u00fasculo -1 (cv = 23,9%) y un porcentaje de fibras tipo i (mhc i) del 27,9% (cv=31,9%).
