Nieves <\/strong><\/h2>\n<p>Se ha determinado el contenido de nitratos y nitritos en determinadas especies vegetales crudas  cocidas y en su agua de coccion. El objeto de este trabajo ha sido observar que modificaciones se producen por el proceso de coccion y cual seria la proporcion de la d.D.A. Que aportarian al organismo al consumir los productos vegetales en el estado de consumo mas habitual (crudo o cocido). Se han analizado 114 muestras  clasificadas segun el fin a que han sido destinados los resultados y correspondiendo a 11 especies diferentes. Los metodos utilizados estan basados en las normas afnor. Con los resultados obtenidos se ha llegado a las siguientes conclusiones: no todos los productos vegetales acumulan nitratos. Las acelgas son las que presentan mayor proporcion de estas sales y las que ceden menos agua de coccion.
