Rosa <\/strong><\/h2>\n<p>Se ha realizado el analisis microbiologico de 300 muestras de fiambres  en distintas condiciones: recien elaboradas y alteradas a temperatura ambiente y de refrigeracion. Se realizaron diversos recuentos tanto bacterianos como fungicos. A su vez se hizo medida de ph y aw. Se han clasificado todas las cepas bacterianas aisladas y se ha hecho un estudio de la actividad enzimatica sobre proteinas  lipidos y almidon. Los microorganismos que han predominado tanto en las muestras recien elaboradas como en las alteradas  han sido bacterias aerobias viables mesofilas y psicrotrofas asi como hongos. El ph y la aw presentan valores proximos a 7 y a 1 respectivamente  lo que favorece la actividad microbiana en estos productos. Predominan las cepas bacterianas sobre las fungicas siendo de las primeras los generos predominantes staphylococcus y micrococcus siguiendoles bacillus. En cuanto a bacilos gram &#8211; el genero que predomina es serratia.
