El acido malico forma en exceso de metal cuatro complejos diferentes de estequiometrias 1:1  2:2  2:2 y 2:2 a valores de ph 8.0  6.0  4.0 y 2.0. En todos ellos los espectros de r.M.N. De 1h y 13c indican que la coordinacion es por los dos grupos hidroxilo en posicion 2. El acido citrico forma complejos similares en los que la coordinacion es por solo los mismos grupos funcionales (uno alcoholico y otro carboxilico) el comportamiento del acido galactarico es totalmente analogo al del acido tartarico formando tres unicas especies complejas de estequiometrias 1:2  2:2 y 2:2 (metal:ligando) a valores de ph 5.50  3.0 y 1.0
