Las principales orientaciones productivas son la carne en el ovino y la leche en el caprino. los quesos de oveja y cabra extreme\u00f1os tienen un futuro prometedor, que puede suponer un refuerzo importante para la viabilidad de las explotaciones y para el mantenimiento del ecosistema dehesa.  en este trabajo se analiza la comercializaci\u00f3n y el consumo de los quesos en extremadura, llevandose a cabo mediante una encuestaci\u00f3n realizada a 812 consumidores y a 206 detallistas, distribuidos de forma aleatoria por toda la comunidad autonoma.  se estudia la actuaci\u00f3n de los detallistas en la comercializaci\u00f3n del queso y el comportamiento de los consumidores, profundiz\u00e1ndose en aspectos tales como las formas de aprovisionamiento, la formaci\u00f3n del margen comercial o las practicas comerciales, por lo que respecta a los detallistas.  con relaci\u00f3n a los consumidores, se analiza el consumo de queso en extremadura,asi como el precio pagado por el queso, y diversos aspectos sobre el comportamiento y la actitud del consumidor hacia los quesos.
