Valencia. Se ha puesto de manifiesto que tanto las operaciones prefermentarias como el estado sanitario e indice de madurez de la vendimia  afectan de forma importante la composicion del mosto. Asimismo  se ha comprobado el efecto de la calidad de la vendimia  y la interaccion de las operaciones prefermentarias con la temperatura de fermentacion y el estado de madurez de la uva  sobre la composicion y calidad organoleptica del vino.
