Victoria L\u00f3pez Alonso <\/strong><\/h2>\n<p>La utilizaci\u00f3n de levaduras seleccionadas requiere su caracterizaci\u00f3n con el fin de detectar posibles fraudes o contaminaciones como consecuencia de su producci\u00f3n industrial por lo que se han caracterizado 45 cepas comerciales de levadura empleadas en vinificaci\u00f3n, encontrando que la combinaci\u00f3n de tres t\u00e9cnicas moleculares; an\u00e1lisis de restricci\u00f3n del mtdna, electrofor\u00e9sis de cromosomas y amplificaci\u00f3n de elementos  es necesaria para la completa diferenciaci\u00f3n de las cepas, \u00fanicamente 30 son diferentes entre s\u00ed.  se ha simplificado el m\u00e9todo de restricci\u00f3n del mtdna desarrollado por querol y colaboradores 1992 consigui\u00e9ndose una reducci\u00f3n total de 52,2 h en comparaci\u00f3n con el m\u00e9todo original, demostrando que el m\u00e9todo es util para la identificaci\u00f3n de cepas v\u00ednicas y no v\u00ednicas de s.
