El zumaque es una planta que se adapta muy bien a las condiciones edaficas y climaticas del sudeste espa\u00f1ol. Las tecnicas de cultivo desarrolladas permitieron obtener rendimientos de hoja muy superiores a los mencionados en la bibliografia. La extraccion de taninos de la hoja de zumaque mediante tecnicas de bajo impacto medioambiental permiten agotar su contenido tanico y producir extractos de calidad para diferentes aplicaciones industriales. Los compuestos fenolicos identificados en los extractos de zumaque fueron: acido galico y 1,2,3,4,6,-b-pentagaloil-d-glucosa, ademas de sus correspondientes hexa-a dodecagaloil-derivados. La capacidad curtiente de los compuestos identificados esta relacionada con su tama\u00f1o, cuanto mayor es, mas capacidad tienen de complejar las fibras de colageno. el acido galico, aunque no es un tanino, influye en la etapa de curticion facilitando la penetracion del resto de compuestos. Desde el punto de vista de la calidad, las pieles curtidas con extracto de zumaque son suaves, flexibles, muy claras y no se oscurecen al ser expuestas a la luz. Se ha demostrado que la capacidad antioxidante de los extractos obtenidos es superior a la de los taninos comerciales que se emplean en curticion, su aplicaci\u00f3n como recurtiente vegetal sobre pieles curtidas con sales de cromo trivalenes disminuye drasticamente la aparicion de cromo hexavalente. el tanino de zumaque aplicado en vinos experimentales producidos a partir de uva monastrell, mostro mejor comportamiento en cuanto a la estabilidad de compuestos fenolicos y color, que otros taninos enologicos comerciales.<\/p>\n<p>&nbsp;<\/p>\n<h3>Datos acad\u00e9micos de la tesis doctoral
