<\/strong><\/h2>\n<p>Se ha estudiado la evoluci\u00f3n de diversos par\u00e1metros quimicos como el obrix, ph y acidez total y de parametros fisicos como el tama\u00f1o y los espectros de reflectancia, transmitancia y las coordenadas de color de las bayas de la variedad tempranillo desde el envero hasta la vendimia y durante la sobremaduracion, asi como las relaciones entre ellos para controlar el momento idoneo de la vendimia.  los resultados indican que las medidas realizadas por reflectancia no permiten seguir la evoluci\u00f3n del color de las bayas a partir del instante en que visualmente son negras, ya que no se produce ninguna variacion en su espectro ni en las coordenadas de color que de ellas se obtienen, sin embargo las medidas de transmitancia realizadas sobre el hollejo de la baya son las mas indicadas indicar el grado optimo de coloraci\u00f3n de los granos de uva y por tanto de la vendimia,ya que se observa que, ha partir de un determinado minimo en la coordenada de color l*, o bien del triestimulo y, aumentan estos valores alcanzando valores similares a los obtenidos 15 dias antes del minimo.<\/p>\n<p>&nbsp;<\/p>\n<h3>Datos acad\u00e9micos de la
