En este trabajo se ha estudiado la eficacia de tres medios selectivos para el aislamiento de aeromonas spp. A partir de alimentos, llegando a la conclusion de que el medio de ryan es el mas adecuado. Se aislaron 81 cepas de alimentos con el fin de compararlas con 15 cepas de aeromonas aisladas en heces diarreicas humanas. Se observo que estas cepas eran sensibles al cloro e incapaces de crecer a 4 grados c cuando el ph era 6. En las cepas aisladas de alimentos y de heces diarreicas humanas se estudiaron factores de virulencia extracelulares, concretamente la produccion de hemolisinas, citotoxinas (realizando los ensayos de citotoxicidad sobre dos lineas celulares estables), proteasas y lipasas, en el sobrenadante completo, fraccionado por ultrafiltracion tangencial con diafiltracion y obtenido en distintas fases del crecimiento bacteriano. Igualmente se comparo la presencia de factores de virulencia superficiales (hemaglutinacion, inhibicion de la hemaglutinacion en presencia de azucares, autoaglutinacion, aglutinacion en presencia de acriflavina, hidrofobicidad superficial, y deteccion por microscopia electronica de la produccion de pili y capa s), en cepas diarreicas y alimentarias. Al comprobar que estos factores de virulencia estaban presentes tanto en cepas diarreicas como alimentarias, se estudiaron las asociaciones que podian existir entre los factores de virulencia analizados sin tener en cuenta el origen de las cepas. Se detecto que la no aglutinacion con acriflavina, la no fermentacion de la arabinosa y el voges proskauer positivo, conjuntamente, se asociaban a la totalidad de los factores de virulencia estudiados, principalmente, el voges proskauer se asocio en mayor grado y al mayor numero de factores de virulencia.
