La aplicacion de tecnicas moleculares de identificacion de levaduras permite llevar a cabo un seguimiento de la etapa fermentativa asi como identificar distintos tipos de levaduras en la etapa de crianza biologica y asociar un tipo de levadura con caracteristicas organolepticas del vino producido por ellas. Debido a la elevacion de temperatura que sufre el vino en los meses de verano se produce un deterioro de la levadura de flor que afecta al proceso de envejecimiento, el analisis de parametros tales como el contenido de etanol, la temperatura, la presencia de mutantes, etc.  determinan que el control de estos parametros puede ayudar a paliar este deterioro en los meses de verano. La formacion de nuevas combinaciones de nucleos y mitocondrias de levaduras de flor y de laboratorio permite llevar a cabo una aproximacion genetica para la mejora de la levadura en su tolerancia al efecto de las temperaturas. Finalmente, se ha desarrollado un sistema mediante pcr para la deteccion de la presencia de levaduras del genero dekkera en la fase de crianza biologica que provoca la elevacion de la acidez volatil
