este trabajo consiste en la evaluacion de las perspectivas de aplicacion de la tecnolog\u00eda microondas en el proceso de obtencion de agar, abordado desde dos frentes claramente diferenciados y complementarios como son, por un lado, el estudio del secado microondas aplicado al proceso fabril (tanto de la materia prima como del producto final, asi como su empleo en la determinacion rapida del contenido en humedad) y, por otro, el estudio de la influencia del procedimiento de secado sobre las propiedades del producto elaborado.Con este fin se ha llevado a cabo el dise\u00f1o, construccion y puesta a punto de un secadero piloto mixto convectivo-microondas que posibilita el estudio de la cinetica de secado de un amplio espectro de materiales, asi como la evaluacion del rendimiento energetico del procedimiento de secado, todo ello en un amplio margen de condiciones experimentales, de cara a la optimacion del proceso.<\/p>\n<p>&nbsp;<\/p>\n<h3>Datos acad\u00e9micos de la tesis
