Dado que la viabilidad del proceso industrial de resolucion de las mezclas racemicas pasa por la obtencion de las enzimas a partir de fuentes economicas y altamente productivas, se pretende utilizar la levadura trigonopsis variabilis como fuente industrial de dao y catalasa debido a la gran cantidad de enzima que presenta y a la especificidad de esta. La informacion obtenida en este trabajo acerca del crecimiento y sintesis de enzimas en t. Variabilis puede ser utilizada para el dise\u00f1o de un fermentador industrial. Con el fin de obtener esta informacion, se estudiaron las variables relacionadas  con el proceso, elaborando modelos para reproducir los resultados obtenidos en cuanto a la influencia de la temperatura, ph, fuentes de nitrogeno y concentracion de oxigeno en el crecimiento de la levadura y en la sintesis de enzimas.  el desarrollo del proceso de produccion de enzimas no concluye con el estudio de la fermentacion de trigonopsis variabilis sino que permanece abierto a la utilizacion de cepas transformadas geneticamente, en las que se tiene previsto estudiar el uso de materias primas mas economicas (melazas) que no son utilizables en el caso de lati.
