Jose <\/strong><\/h2>\n<p>Debido a la situacion excedentaria del sector vinicola en espa\u00f1a, la reduccion de estos excedentes es un objetivo prioritario para el sector. La desalcoholizacion de vino es una alternativa a la destilacion, metodo empleado actualmente para reducir los excedentes.  en este trabajo se lleva a cabo la desalcoholizacion de un vino por pervaporacion.  los objetivos son: la fabricacion de una serie de membranas hidrofobas de pervaporacion, con capacidad desalcoholizadora. En segundo lugar, determinar las condiciones optimas de trabajo de la planta de pervaporacion para la desalcoholizacion parcial de vinos.  la puesta a punto de las tecnicas analiticas necesarias para el control del proceso y la evaluacion del vino parcialmente desalcoholizado obtenido.
