Por un lado, seleccionar y caracterizar cepas de lactobacilos de productos carnicos fermentados para utilizarlos en el estudio de la fermentacion. Por otro, caracterizar y clonar el sistema de transporte de glucosa de los lactobacilos, asi como determinar su relacion con la represion catabolica.  para cumplir el primer objetivo, se seleccionaron varias cepas que fueron identificadas y se determinaron algunas propiedades fisiologicas y su capacidad de implantacion.  esto ultimo supuso la necesidad de desarrollar un metodo rapido, sencillo y reproducible de llevar a cabo la fermentacion y seguir la implantacion de las cepas. Por otra parte, el estudio del transporte de glucosa permitio determinar que en los lactobacilos se realiza a traves de dos sistemas distintos, un pts y una permeasa fpm-dependiente.
