(Actual u.E.), Los corderos en aragon se ha visto influidos negativamente (precios) por la aparicion en el mercado de canales de cordero importadas. Como defensa se hace preciso objetivar la calidad de la carne dentro de los diversos tipos de \u00abternasco\u00bb que se comercializan en aragon, que es en definitiva lo que el comprador paga y consume.  se ha partido de 86 canales: nacionales (rasa aragonesa, merina espa\u00f1ola y manchega), importadas congeladas (neozelandesas y argentinas) y refrigeradas (britanicas) y procedentes de animales importados vivos (lacaune lactante y destetado y merino aleman).  el ph mas alto en la cabeza larga del triceps (clt) corresponde a las canales congeladas mientras que las merina espa\u00f1olas lo presentan mas bajo. En el longissimus dorsi (ld) los phs son en general inferiores. En la capacidad de retencion de agua (cra), en clt las canales de lacaunes destetados, merinos alemanes y congeladas poseen el mayor % de jugo expelido mientras lacaunes lactantes y britanicas son las que tienen la mejor cra.  en ld de nuevo estas ultimas, junto con las rasas, se situan con una mejor valoracion en este parametro.  considerando el color, las canales de pastencos (congeladas y refrigeradas) poseen los menores valores triestimulos, tienen una carne mas oscura mas roja, el menor angulo (h*), el color mas saturado, una mayor cantidad de pigmentos y la grasa mas amarilla. Las canales procedentes de animales importados vivos, tienen ademas de los mayores valores triestimulos, la carne mas clara, menos roja, menor saturacion, menor cantidad de pigmentos y la grasa mas cremosa. Las canales nacionales ocupan una posicion intermedia entre los dos grupos.
