Asunci\u00f3n <\/strong><\/h2>\n<p>En esta tesis se describe el desarrollo y la validaci\u00f3n de distintos m\u00e9todos de an\u00e1lisis, con el objetivo de detectar adulteraciones con prote\u00ednas de origen vegetal en leche en polvo y productos l\u00e1cteos.  se estudiaron diferentes preparaciones comerciales de prote\u00ednas de origen vegetal, como soja, guisante, trigo y ma\u00edz, que pudieran ser susceptibles de utilizarse como adulterantes en productos l\u00e1cteos, y se desarrollaron m\u00e9todos de electroforesis capilar, aplic\u00e1ndolos a la detecci\u00f3n de adulteraciones en mezclas de leche en polvo con prote\u00ednas de origen vegetal. Se consigui\u00f3 una elevada sensibilidad, gracias a la introducci\u00f3n de una etapa de pre-tratamiento de la muestra con tamp\u00f3n tetraborato-edta, ph 8.3, que permite eliminar las prote\u00ednas l\u00e1cteas de la mezcla.  los m\u00e9todos desarrollados se evaluaron, estudiando sus ventajas e inconvenientes, seleccion\u00e1ndose un m\u00e9todo de electroforesis capilar en gel con sds (sds-cge), que se optimiz\u00f3 y se compar\u00f3 con un m\u00e9todo de electroforesis en gel de poliacrilamida con sds (sds-page). Ambos m\u00e9todos se aplicaron a la determinaci\u00f3n de los porcentajes de adulteraci\u00f3n con prote\u00edna de soja, prote\u00edna de guisante y gluten de trigo en muestras de leche en polvo de tratamiento t\u00e9rmico bajo y alto, adulteradas en origen, permitiendo la determinaci\u00f3n de, al menos, hasta un 1% de prote\u00edna de soja y guisante en prote\u00edna total (p\/p) en las muestras de bajo tratamiento t\u00e9rmico. Tras su optimizaci\u00f3n, el m\u00e9todo de sds-cge se valid\u00f3 mediante ensayos colaborativos, con la participaci\u00f3n de distintos laboratorios europeos.
