En la primra parte se abordan los aspectos relacionados con cuestions teoricas basicas en analisis sensorial y su aplicacion, como es el calculo de umbrales gustativos. En el capitulo 2 se desarrolla la preparacion de las muestras cuando su analisis directo o es dificil o es poco informativo, y posteriormente la adaptacion al vinagre de vino de los criterios generales que deben reunir los metodos descriptivos, para establecer su perfil sensorial. En el capitulo 3 se estudio el caso particular del seguimiento de la evolucion en botella de las caracteristicas quimicas y sensoriales de los vinos blancos jovenes en funcion del tiempo y de las condiciones de comercializacion.
